Panko-breaded chicken breast strips

2 Boneless, skinless chicken breasts2 cups panko breadcrumbs3 tsp Dijon mustard4 tbsp Extra Virgin olive oil Salt, pepper, and other herbs/spices as desired
Pound chicken breasts flat, about 1/2 inch thick or whatever thickness you prefer. Cut into strips (or chunks or whatever shape you prefer; smaller pieces will need more coating). Spread dijon mustard over each breast, then dredge in panko mixed with salt, pepper, and other herbs or spices.
Heat 1 tbsp of olive oil over medium-high heat. Cook chicken for about 5 minutes on each side. Add more olive oil as needed (each batch you cook will absorb oil).
Serving Size: 4 servings (1/2 chicken breast each)
