Peanut Butter & Bannana Chia muffins

1 1/2 c. whole wheat flour1 1/2 c. rolled oats4 tsp. baking powder1 tsp. salt1 tsp. baking soda1 c. plain yogurt3/4 c. Agave2 ripe small bananas1/2 c. PB2 3 Tbsp Chia3/4 c. water1 tsp. vanilla extract
To make Chia gel: Place Chia seeds in water and set aside.
In a large bowl, combine flour, oats, baking powder, salt, PB2, and baking soda. In another bowl, beat together yogurt, smashed bananas, Agave, Chia gel, and vanilla until smooth. Add mixture to the dry ingredients and stir just until moistened and blended. Do not overmix.
Spoon batter into prepared muffin tin, filling cups 3/4 full. Bake in preheated oven at 350° for 25-30 minutes, or until done.
