Hamburger Bun, Low-Carb with Flax and Oat Fiber

Ingredients
Oat fiber (honeyville grain), 4 TbspFlax Seed Meal, Bob's Red Mill, Organic Whole Ground, 4 TbspSalt, 1 dashBlack Pepper, 1 dashCaraway Seed, 1 tspBaking Powder, 1/2 tspEgg, fresh, 1 largeSparkling Water (Plain), 4 tsp (or plain water)Grapeseed Oil, 1 tsp
Directions
In a small mixing bowl, whisk together dry ingredients to blend.

In a small cereal bowl, whisk egg, oil & sparkling water together to combine.

Add wet ingredients to dry and stir with a fork until blended.

Spray a small round glass dish (I use a Pyrex 2 cup glass storage container about 4" across) with baking spray, then add batter and spread out evenly.

Microwave for on high for one minute, then rest for a minute. Insert a steak knife into center - if it comes out clean, it's done. If not, microwave for 10-15 seconds more and that'll probably do it.

Pop it out and slice it horizontally and use as a hamburger bun.

Serving Size: Makes one small loaf to slice as a hamburger bun ;)

    I think this recipe might have some potential. I've noticed a nice flavor from other recipes that have equal amounts of oat fiber and flax. The problem here is something is way off with the amount of liquid. I didn't get a batter so I did 4 tbl of water. This still would not hold together. - 8/6/20

    I found this recipe just a bit heavy, but it was very good with butter and a slice of cheese. the recipe states that there is 489 mg of sodium... my question is WHERE as salt is only a dash. - 1/6/20
