Boneless Skinless ChickenCauliflower, 1 headOnionShitake mushrooms (dried, reconstitute per directions)Chicken broth 2 cupsWater ChestnutsBamboo shootsCorn starch, 1/4 cupOil for frying
Chop chicken, cauliflower and onion into bite size pieces, chop or reconstitute mushrooms. Stir fry chicken until browned, set aside. Stir fry Cauliflower until lightly browned, set aside.
Stir fry onions, then add chicken, cauliflower, mushrooms, bamboo shoots, and water chestnuts, and chicken broth. Simmer until cauliflower is barely tender, about 10 minutes.
Soften corn starch with 1/4 cup water, then dilute with another cup of water. Pour into boiling stir fry and stir until boiling (sauce should thicken and become translucent).
Serving Size:�approximately 8 1/2 cup servings
