King's Ranch Chicken

1 green bell pepper, chopped1/2 medium onion, chopped1 can low fat, low sodium condensed cream of mushroom or chicken soup1 (10 oz) can tomatoes with chilies8 oz cubed chicken, cooked4 corn or flour tortillas, torn in pieces6 tbsp or 1/3 cup shredded reduced fat cheese
Cook meat in a dutch oven until brown.
Add onions and green peppers, to grill slightly.
Then add soup and tomatoes.
Layer tortillas and soup mixture in a small casserole dish. Sprinkle cheese over the top of the casserole and bake uncovered at 325*F for 40 minutes or until bubbly.

A little more watery than I was expecting. Next time I will use tortilla chips or harden the corn tortillas before I put them into the recipe. I used flour this time around and they were a soggy mess when I pulled the dish out of the oven. Still yummy and makes great leftovers. - 1/25/11

This was one of the first recipes I tried on SP and it was GREAT! It's got me using a lot more of the recipes on here. I was craving for it all week but it sounded more like a Sunday dinner so I made it on Sunday and left it to bakw while I got some chores done after church. I was very impressed! - 5/2/08
