Ingredients
6 medium red potatoes, washed and cut into chunks1 TBSP EVOO1 medium red onion1/2 tsp sea salt or Herbamare1 tsp garlic powder1 tsp dried oregano1/2 tsp ground cumin1/4 tsp freshly ground black pepper
Directions
1. Place potatoes in steamer basket in a med pot filled with about 2 inches of water, cover, and steam until tender but not all the way cooked, about 10 minutes depending on the size of the potato chunks. Remove and let cool.

2. In a large stainless steel skillet (11"works well) or pot, saute' onions in olive oil until golden, about 5 to 7 minutes. Add sea salt, garlic powder, oregano, ground cumin and black pepper, saute' one minute more.

3. Add potatoes to onion mixture and saute' for 5 to 10 minutes or until golden brown, being careful not to burn. Add more olive oil if potatoes begin to stick to pan.

    Yummy! This is a great, easy way to spotlight the flavor of fresh ingredients. I used fresh garlic because I had it, and put a poached egg on top for protein - breakfast! - 5/9/15
