Pumpkin Pancakes

Ingredients
2c brown rice or garbanzo flour3 Tbsp packed brown sugar2 tsp baking powder1 tsp baking soda1 tsp allspice1 tsp cinnamon1 tsp ginger1/4 tsp salt1c canned pumpkin1 large egg2 Tbsp olive oil2 Tbsp apple cider vinegar
Directions
Mix dry ingredients in a bowl. Add wet ingredients. Mix well with a hand mixer. Heat a non-stick griddle on medium heat (until it's HOT!). Spray with non-stick spray. Make pancakes (1/4c batter). They really need no syrup. YUMMY!!
