Mexican Shepherd's Pie #2

Ingredients
2 pounds of extra lean ground beef8 teaspoons of taco seasing (or to taste)1/2 cup of chopped onions1/2 cup of chopped green peppers1 can of drained corn1 cup of mild salsa1 cup of fat free cheddar cheese1 cup of fat free sour cream1 box of cornbread mix2 eggs1 cup of fat free milkPlace ground beef, onions, peppers, and taco seasoning in a skillet and fry until meat is brown and vegtables are cooked. Add drained corn and the salsa. Mix well.Spread meat mixture in a 13x9 inch cake pan (sprayed with Pam).Sprinkle cheese evenly over mixture.With spatula, spread sour cream evenly over top.In a seperate bowl place cornbread mix (I used an 18 oz. box of Miracle Maize brand), 2 eggs, 1 cup of milk and mix well until you have a batter of pouring consistancy.Pour cornbread batter evenly over top of ground beef mixture.Bake in a 400 degree oven for 30 minutes.Enjoy!
Directions
Put into a 400 degree pre-heated oven and bake for 30 minutes or until cornbread is golden brown.
