Apple/Carrot Muffins

Ingredients
1 Cup Hodgson Mill multi-grain oatmeal w/flaxseed and soy1 Cup unbleached white flour1 Tbsp baking powder1/2 tsp baking soda1/2 tsp salt1/2 Cup granulated sugar1 Cup carrots-grated 1 Cup apples-chopped2 eggs1/2 Cup Milk, 2%1/4 Cup canola Oil1 tsp vanilla extract1/2 Cup pecans
Directions
Preheat Oven to 400F. Line 12 muffin cups with paper liners.
Blend together dry ingredients.
Add remaining ingredients and mix until blended.
Batter will be thick; spoon into muffin cups.
Bake 20-22 min. or until golden brown.
