2 cups canned black beans, rinsed1 small onion, chopped2 cloves garlic, minced2 cups water3 cups beef broth2 stalks celery, chopped3 medium carrots, chopped4 medium potatoes, chopped1 cup pearl barleyPepper to taste
Add the beans, well rinsed to get the salt off, to the crock pot. Add the onion & garlic, and then 2 cups of water; stir. Add the broth and the carrots and celery; cook on high for 3-5 hours.
In the last hour of cooking, add the potatoes and the barley. Watch the pot and add more water if necessary as the barley absorbs it.
Season with pepper to taste.
