Cheesy Meat Loaf Minis

3/4 c cooked quinoa1 c chopped onion2 cloves garlic2 plum tomatoes peeled and pureed3 ounces light white cheddar cheese1/4 c chopped fresh parsley2 tbsp grated parmesan cheese1 tbsp horseradish1 tsp dry mustard1/4 tsp salt1/4 tsp black pepper1-1/2 lb ground turkey 1 large egg beaten
1. Preheat oven to 425
2.Sautee onions and garlic for three minutes using medium-high heat and cooking spray. Add all ingredients into a bowl keeping aside 1/2 the tomato puree. Mix and make 8 mini loaves. Drizzle remaining tomato sauce over the loaves and bake for about 25 minutes.
