"Tom Kha Gai" Chicken

Ingredients
6 oz chicken breast, chopped small3 shallots, minced3 cloves garlic, minced3 tbsp cilantro, minced1 tsp ginger, minced.5 lime, juice.5 c light coconut milk.25 c chicken broth
Directions
Mix chicken with everything BUT the coconut milk and chicken broth. Heat a nonstick pan, add chicken. When it's sauteed (takes not even a minute), add coconut milk and chicken broth; let simmer. Serve however you like! I prefer it either as a lettuce wrap or with rice.
