Stuffed Grape Leaves

Ingredients
1 lb. ground leg of lamb, trimmed of fat2 cups white rice60 grape leaves1.5 cup lemon juice4 tbsp clarified buttersalt and pepper to taste
Directions
Layer grape leaves in pot. Pour boiling water over top. Simmer for 10 minutes, then add lemon juice. Simmer for another 10 minutes -- add the clarified butter and cook for another 5 minutes or until tender.

Serving Size: Makes 10 servings of 6 grape leaves each
