Hubby's Skillet Spanish Brown Rice with Chicken

Ingredients
1 C. Brown Rice 1 can Rotel Original Sauce1 C. Black Beans 12 oz Boneless Skinless Chicken Breast2 C. Swanson low sodium Beef Broth 1 C. Diced bell pepper, I prefer red and yellow 1 C. Chopped Onion1 T Oregano1 T cumin1 T garlic Powder1 T Onion Powder 1 tsp. Sea Salt1 tsp. White Pepper1 tsp. lawrys seasoned salt1 tsp cyanne pepper Small bunch of chopped cilantro for garnish
Directions
slice chicken into small strips
combine all spices together in a small bowl

coat chicken with 1/2 of the spice blend

brown chicken in 1/2 T. olive oil then remove from pan and set aside

add chopped veg. to the pan and saute 5 min

Add beans and beef broth and Brown Rice

Simmer on low until rice is tender about 45 min to and hr.

Return chicken to pan 5 min before serving to finish cooking.

Add additional water to pan as needed to keep rice from sticking

Serving Size: make 4 1 1/2 cup servings
