Jerk Chicken Enchillada

*1/3 cup water*Butter, salted, 1 stick *Cocoa, dry powder, unsweetened, 2 tbsp *Beef boullion, 2 cubes*Jerk seasoning, 1 serving *Cooked chicken Breast, no skin, 1 lb ready-to-cook *Corn Tortillas, 4 tortilla, medium (approx 6" dia) *Mozzarella Cheese, part skim milk, 12 oz
Melt butter in pan.
Mix 2 cubes beef boullion with 1/3 cup water
Remove pan from burner.
Add cocoa to butter and blend into paste.
Add Jerk seasoning and stir.
Add the boullion liquid and blend again.
Shred chicken breasts and stir into mixture in pan.
Layer corn tortilla, with coated shredded chicken, then mozzarella cheese, then layer again
Layer corn tortilla, with coated shredded chicken, then mozzarella cheese, then layer again
until you don't have enough to layer again
Top with mozzarella cheese, put under broiler to melt cheese and serve!
