Paulette's Calico Soup

Ingredients

1 cup water1/2 cup quinoa2 Hillshire Farm chicken sausage links2 cups (1 can) low sodium chicken broth1 1/2 cups canned tomatoes, no salt added1/4 cup black beans, rinsed and drained1/4 cup shopped onions1/5 cup chopped fresh mushrooms 1 tsp. olive oil1/2 cup washed and torn fresh spinach leaves
1. Cook quinoa in water according to package directions. While quinoa is cooking, finish other preparations.
2. Pour broth, beans and tomatoes in crockpot and turn control to high, cover.
3. Saute mushrooms and onions in olive oil. Add to crockpot.
4. Slice sausages diagonally into 6 pieces each (12 total) and add to crockpot.
5. Set timer for 1 hour and 45 minutes. If soup isn't to the boiling point, you may need to add a few more minutes.
6. When timer rings, add spinach leaves, stir, cover and reset timer for 15 minutes.
7. Divide evenly among 4 bowls, making sure 3 pieces of meat are in each bowl.
