Raw vegan sandwich cookies

Pumpkin Seeds, 0.5 cup (remove)Hazelnuts, 0.5 cup, whole (remove)*Navitas Raw Cacao Powder (1 serving = 2.5 Tbsp or 14g), 1 serving (remove)*agave (organic raw blue agave syrup - dark), 1 tbsp (remove)*Dates, Medjool (2 dates), 1 serving (remove)Banana, fresh, 2 medium (7" to 7-7/8" long) (remove)Strawberries, frozen, unsweetened, 0.5 cup, unthawed (remove)Coconut Oil, 5 tbsp (remove)
Pulse everything but the bananas, strawberries and oil in a food processor. It should stick together when pressed. Spread out in an even layer and press out hearts with a heart-shaped cookie cutter. Set aside.
Put the three remaining ingredients in a blender. Puree until smooth. Spread out on a cutting board and put in freezer to get solid. When ready, press out heart-shapes again and lay on top of one of the nut-hearts. Top with another nut-heart. Continue until you have five heart-sandwiches.
You will have quite a lot of extra filling! This can be eaten as is or used in a delicious smoothie! Or served with yoghurt! Your choice!
Serving Size: Makes 5 cookies with about 1 cup of extra filling.
