Red Lentil and Eggplant Curry

Ingredients
1 onion1 leek1 eggplant1 tbsp curry1 tbsp garam masala1 tsp cumin600 ml vegetable stock1 cup red lentils100 ml lite coconut milk
Directions
Spray cooking pot, saute onion and leek until soft (~5 minutes). Add spices and saute additional minute. Add stock, eggplant, and lentils. Bring to a boil and then simmer for 30 minutes. Add coconut milk, stir, and serve.
