Kudu Sausage Casserole

Ingredients
Use Kudu sausages or any type of sausages you like - 4 sausages grilled until brown then chopped into inch piecesCanned tomato x 1Celery x 1 stalkBeans - kidney or borlotti or cannelloni.. any you like x 2tbspSweet potato - 1 small, peeled, chopped into inch piecesOnion - preferably red x 1 medium, chopped Garlic x 2 cloves, sliced thinly or crushedRed wine - any - 50 - 100ml to tasteLamb or beef stock
Directions
Put a glug of olive oil into a medium sized deep pan, fry gently until soft, add the garlic and cook for another minute.
Add the celery, potato, sausages and cook for another 10 minutes.
Add the red wine, beans and the stock and leave to simmer until the potato is soft.
Serve with bulgar wheat, couscous or mash depending on how many calories you want!
