Susan's Light & Tangy Tuna Salad

Ingredients
Drain tuna well and place in large mixing bowl. Using the zest & juice of 1/2 fresh lemon, mix with tuna in bowl. Add and mix all remaining ingredients: 2 Tbsp mayo w/ olive oil, sweet pickle relish, chopped green olives, 4 tsp of brown deli or dijon mustard. Refrigerate for at least 4 hours to let flavors marry. Serve on multi-grain toast or romaine lettuce cups.
