Chicken and Black Bean Super Soup

Ingredients
1/2 medium onion chopped1/4 cup medium pearl barley1 tbsp canola oil1 garlic clove minced32 oz box of reduced sodium chicken broth6 oz chicken, cut into bite size pieces1/2 cup dried lentils1 jar picante sauce1 can black beans , rinsed1/4 cup chopped cilantro4 cups fresh spinach, chopped
Directions
Sauté onion and barley in oil until onion is tender. Add garlic, cook 1 minute longer. Add the cut up chicken and lentils, then broth and bring to a boil. Reduce heat; cover and let simmer for 15 minutes. Add the picante sauce and cilantro; cover and simmer 10 minutes more or until lentils are cooked. Add the chopped spinach and simmer uncovered for 5 minutes until spinach is wilted.

Serving Size: Makes 8 - 1cup servings of soup
