Dark Chocolate Cherry Cake

4 oz bittersweet chocolate (60% or higher) chopped4 oz maraschino cherries, drained and chopped3/4 c white sugar2 whole eggs6 egg whites1t vanilla extract1/2 c pureed cooked beets1/4 c finely ground flaxseeds1/2 c whole wheat pastry flour1/4 c cocoa1/4 t baking powder
preheat 350 degrees. Spray 9" round cake pan.
Combine chocolate, sugar, and 1/2 water in a small saucepan and melt over low heat, stirring occasionally. Allow to cool slightly.
In a separate bowl, stir together 2 eggs, 1 egg white, vanilla, pureed beets, cherries and cooled chocolate.
In another bowl, combine flaxseed, flour, cocoa, and baking powder. Blend dry ingred into the egg bowl, stirring just until combined.
Using mixer and wire whisk, whisk the 5 egg whites until stiff. Place 1 heaping T into the cake batter and stir. Slowly fold the rest into the cake batter. Pour into pan, bake until toothpick inserted in middle comes out clean, from 30-40 minutes. Let cool in pan 5 minutes, remove from pan and cut.
Serving Size: Cut cake into 10 pieces
