Basic Bran Muffins

3 Tbsp canola oil1 c all-purpose flour1 c wheat bran1/4 c sugar1/2 tsp salt3 tsp baking powder1 egg1 c milk
Preheat oven to 400 and grease (or line with paper cups) a standard 12 cup muffin tin.
Mis together the dry ingredients in a bowl. Beat together the egg, milk, and oil. Make a well in the center of the dry ingredients and pour the wet ingredients into it. Using a large spoon or rubber spatula, combine the ingredients swiftly, stirring and folding rather than beating, and stopping as soon as all the dry ingredients are moistened.
Spoon the batter into muffin tins, filling 3/4 full. Bake 20-30 minutes, or until the muffins are nicely browned and a toothpick inserted into the center of one of them comes out clean.
Let cool for 5 minutes before removing from muffin tins. Serve warm with honey. Mmmm.
Makes 12 regular-sized muffins.
