Chicken & Sausage Creole

Ingredients
3lbs. chicken thighs, boneless & skinless2 tbs. olive oil2cups chopped onion1.5 cup chopped bell pepper1 cup fresh chopped parsley1.5 cups chopped green onions1 tbs. chopped garlic4 cups water (from boiled chicken, skimmed)2 lg. cans stewed tomatoes2 tbs. soy sauce1 tsp. tobasco sauce2 packages lil' smokies beef sausages, pre-boiled
Directions
Simmer chicken till cooked through. Remove, strain stock and save. Heat oil, saute onions, bell pepper, parsley, and green onions until onions are clear. Add garlic and stock. Stir in tomatoes and soy sauce, bring to boil. Add chicken and sausage, return to boil. Simmer, covered at least one hour.
