Shrimp Pad Thai

Saute:2 T. olive oil4-5 cloves garlic, crushed2 T. chopped shallots2 eggs, lightly beaten1 lb shrimp, boiled, and peeledSauce:3 T lime juice3 T fish sauce2 T Simply Jiff Peanut Butter3 T sugar, brown sugar, or molasses1 T catchupPad Thai Noodles:1 8oz pkg Pad Thai Rice noodles, cooked, drained. rinsed in cold water, and rinsed again.3 c. bean sprouts1 1/2 c. seeded and chopped tomatoes3 T chopped fresh cilantro3 T chopped dry roasted peanuts4 scallions, thinly sliced1 lime cut into wedges
Heat oil in a skillet over medium heat. Add shallots and saute for two minutes. Add garlic and saute until until translucent. Add eggs and cook, stirring constantly until eggs are cooked through and scrambled into small pieces.
In a small bowl whisk together sauce ingredients and set aside.
In a large bowl toss together the Pad Thai Noodle ingredients. Add the egg mixture and the contents of the sauce bowl and toss until well mixed.
Serve chilled, at room temperature, or warmed through.
