Select a small red potato.. Wash and Microwave on high for 2 minutes either side, then leave to cool .Grate Cheese,Carrot,Celery,Cauli,Capsicum, and or any other raw veggies you so desire.Mix all together.Scoop some of the center of the cooled potato out to make room for Veggie MixFill the hole with the veggie mix Place on plate.Slice tomato and advocado thinly and decorate the plate add cooked thin slices of chicken breast. and enjoy!!
