Vegetarian Spanish Rice

1 cup chopped onion4 tsp minced garlic6 T white wine2 15 oz. cans dice tomatoes with chilis1 c diced green bell pepper1 c diced red bell pepper1 c sliced mushrooms16 oz. frozen sweet corn4-6 T medium or hot salsa1 tsp dried basil1 tsp Italian seasoning4 cups cooked brown riceblack pepper/salt to taste
In a wok, saute the onions and garlic in the wine til tender.
Add the tomatoes, peppers, mushrooms, corn, salsa, basil and Italian seasoning.
Bring to boil and simmer for 8-10 minutes. Remove from heat.
Add cooked rice and mix it all together. Season to taste.
Return to low heat and simmer 30 minutes to let the flavors all come together.
Makes 11 1-cup servings.
