1 spaghetti squash cooked2 medium zucchini, sliced length ways1lb ground turkey or chicken cooked2 jars roasted garlic pasta sauce (i used Emerils)1 can of artichoke hearts or 1 pkg frozen (thawed and drained)8oz container of sliced mushrooms4 cups fat free or part skim shredded mozzarella cheese1 cup shredded paremesan
microwave spaghettic squash for about 5 min to soften shell. Cut in half and deseed. Cook in pan, cut side down, in about an inch of water. 400degrees for 45min. While that is cooking, cook your ground turkey, slice your zucchini. Once spaghetti squash is done, fork out the "spaghetti" and set aside or in fridge. In crock pot, put down half ground turkey, pour half jar of pasta sauce on top of meat. Then layer zucchini, artichoke, mushroom then cheese. repeat layers. Cook on low for 6 hours. Serve over spaghetti squash and sprinkle parmesan cheese on top.
