Chicken & Wild Rice

Ingredients
1 chicken breast1 box of long grain and wild rice8 baby carrots1-2 sticks of celeryhalf cup onion
Directions
cut up chicken into bite sized pieces.
dice celery, and onion.
Cut up baby carrots or keep whole.
Open box of rice. Following directions on rice box, add water in an oven safe baking dish. add rice to water and stir. Add chicken, celery, carrots and onion to rice. stir. Put in oven at 350 degrees for 30 minutes. Stir and place back in oven for 10 more minutes or desired tenderness is reached.

    I left out the celery because we had none. I added soy sauce to my serving other was it would have been bland. Shredded the baby carrots. took the seasoning pack out of box and made with chicken broth. This dish was not at all filling. - 3/30/08

    This was very bland, even though I added some dried tomoato and garlic pesto. I used wild rice, and not a box, maybe that was the difference. My husband and I both agreed it tasted healthy! - 1/23/08
