Thai Style Chicken with Lime and Ginger

Ingredients
2 Chicken Breast, bone and skin removed, cut into bite size pieces1 Lime, juiced1 Tbsp Chopped Ginger2 Cloves of Garlic, chopped1 Tsp Fish Sauce (optional)1 Tbsp Cooking oil1 tbsp Honey1 Cup Shiitake Mushrooms1 cup Broccoli100ml (3oz) Rama Cremefine 15% (or low fat cream for cooking or low fat coconut milk)3 Cups of Rice Noodles, cooked as per packet instructions
Directions
Mix the lime juice with the garlic, ginger and fish sauce and marinade the chicken in this for about 15-30 Minutes. Heat the oil in a saucepan, and add the chicken pieces. Fry for about 2 Minutes. Then add the Mushrooms for another 2 minutes. Pour in the rest of the marinade, the fish sauce to taste, 1 Tbsp of Honey and the Cremefine. Cover and cook on low heat for about 15 to 20 minutes. In the meantime, cook the rice noodles as per instructions and rinse. Steam the broccoli for 1-2 minutes and rinse with cold water (this will keep it crunchy) When the chicken is done, add the broccoli to the pot, mix it all up, and serve over the rice noodles.
