egg beater whites- 1 cup=4 eggs with that said I used 3 cups because the recipe I went of off said 12 eggs instead i used egg beater whites. but this wouldn't let me do it in cups so make sure i put the correct amount of tbsp calculated above in the calculator lol,I looked it up so it should be.anyway I used 3 cups of -egg beater whites1/4 cup of green peppers,-chopped1/4 cup red bell pepper-chopped1/4 cup onion all chopped1 cup of Almond milk1/4 cup mild shredded cheese1/4 cup of shredded pepper jack3 slices of honey ham-cut into pieces1 tsp garlic powermixed everything into the same bowl.sprayed my muffin pan with Pam (in my case i have a square muffins very cool) do not use muffin wrappers makes big mess lolI used a 1/3 cup to dish out batter into each muffin spot.and that just gave me enough to do all 12 muffinsI cooked at 350 for 25 min.depending on your pan you may need to adjust time a little my pan was a dark coated.My husband likes these alot and you can freeze them and then throw into microwave for a quick breakfast morning.
