Becky's Easy Ratatouille

Ingredients
Butterball Hot Italian Turkey Sausage 3-4 linksSummer Squash 1 cup, dicedWhite Onion 1/2 cup, choppedMushrooms, sliced 1 cupBeef Broth, 1 cupRed Wine, 4 fl oz Garlic, 4 tspRosemary, dried, 1 tbspRotel Diced Tomatoes & Green Chilies 10 oz. canUncle Ben's Instant Whole Grain Brown Rice, 1 packetOlive Oil, 1 tbspSalt, 1 tsp Pepper, black, 1 tsp
Directions
1. Cook rice according to package, in the meantime,

2. Cut the Italian sausage into bite sized pieces and saute them in a skillet (medium heat) with a little olive oil. Remove from pan and set aside.

3. Saute onions about 5 minutes, add garlic for about a minute. Add beef broth, squash and mushrooms, add red wine and cook down for about 5 minutes.

4. Add the sausage, tomatoes, rosemary, salt & pepper. Cover and simmer for about 20 minutes.
