300g minced beef, low fat1/2 onion, finely chopped2 cloves garlic, finely chopped, minced or crushed1 medium carrot, grated2 tsp coconut oil1 can good quality tomatoes1-2 tbsp tomato paste if you like itsoy sause to taste1/4 cup pesto 1/2 cup red wine if you want, water or stock otherwisesalt, ground black pepper, basil and oregano to taste.1/4 cup grated cheese
Fry onion and garlic on low to medium heat in half of the coconut oil, add grated carrot when onion is soft, let fry for a few more minutes. Put to the side.
In hot pan with the rest of the coconut oil, brown the minced beef. Salt and pepper to taste.
Add onion, garlic, carrot and tomatoes and let it simmer for at least 15 minutes. Add pesto, tomato paste, wine and spices to your taste.
