German Style Red Cabbage

1 med. onion, chopped1 large apple, sliced thin and halved (peel on)1 Tbls Olive Oil1/2 cup water1/2 cup sugar (can use Stevia)4 Tbls Cider VinegarSalt and Pepper, to taste
Heat large skillet and oil, while chopping onion. SAute onion, adding apple. Add water when onions use up the oil so they don't stick. Meanwhile thinly shred the cabbage (I used a mandolin) and add to the pan. Add sugar, vinegar, salt and pepper, mixing well. Cover and let simmer another 15-20 minutes. Taste and adjust the sweet/sourness and seasonings.
