Pumpkin and Green Bean Curry

500g pumpkin, cut into bite size pieces200g green beans1 tbsp olive oil1 tbsp red curry paste1 onion, roughly chopped2 cloves garlic, crushed250ml lite coconut milk1 tbsp fish sauce (optional)2 tbsp chopped coriander
Steam the pumpkin and green beans until soft.
In a frying pan, fry the red curry paste in the olive oil until it starts to give off a spicy aroma. Add the chopped onion and garlic and fry for 5 mins or until the onion is soft.
Add the pumpkin, beans, coconut milk and fish sauce. Cook for a further 5 mins to heat through. Sprinkle with chopped coriander. Serve with rice.
If cooking for vegetarians, omit the fish sauce.
