2 eggs.25 cps fresh bell peppers(whatever color you like).5 ounce chedder cheesespray EVOO
Thinly slice colored peppers. beat 2 eggs.
Heat non-stick skillet, mist with EVOO. Add peppers, then pour in eggs. As eggs begin to set, top with .5 ounces of chedder cheese. (I prefer sharp.) Flip in half, plate, and top with 2 Tbsp. of salsa.
