Ingredients
Buttermilk, lowfat, 2 cup *Country Choice Organic Old Fashioned Oats, 1 cup *Wheat flour, white, bread, enriched, 1 cup *Wheat flour, white, all-purpose, unenriched, 0.75 cup Salt, 1 tsp Baking Powder, 1 tsp Baking Soda, 1 tsp *Splenda Brown Sugar Blend, 25 tsp *Bell Plantation - Pb2 Regular, 2.5 tbsp Vanilla Extract, 2 tsp Egg substitute, liquid (Egg Beaters), 0.5 cup Banana, fresh, 2 medium (7" to 7-7/8" long) Brown Sugar, 1 tsp packed Walnuts, 0.5 cup, chopped *Chocolate, Nestle Real Semi-Sweet Chocolate Chips, 4 tbsp
Directions
Combine Buttermilk and Oats and soak overnight. Preheat oven to 350 degrees. Add the rest of the ingredients except 6 tsp brown sugar and welnuts until well blended. Spray muffin cups with cooking spray and add muffin mix. Top each muffin w walnuts and 1/2 tsp reg brown sugar. Bake for 30 minutes until toothpick comes out clean.

    I really enjoyed these muffins. I loved peanut butter and banana together and the chocolate chips took it over the top. More like a dessert than breakfast. - 2/27/12
