Delicious Zucchini Frittata

Ingredients
3 cups grated zucchini1 smallish chopped onion1 cup Bisquick mix (Heart Healthy)1 cup grated sharp cheddar4 eggs1/2 cup vegetable oil1 tablespoon oregano1 teaspoon salt1 teaspoon ground chipotle (optional)
Directions
Ah, this is easy. Mix it all up, pour it into a pie plate (don’t forget cooking spray), and bake at 350 for 45 minutes or until a knife in the center comes out clean. Enjoy for breakfast or lunch!

For vegetable haters, this really doesn't taste like zucchini. It tastes like a warm, eggy, cheesy deliciousness! If you use the chipotle, it adds a wonderful bacony-flavored spiciness without the caloric implications of including bacon.
