Diabetic Stuffed French Toast

2 TBS of 1/3 less fat cream cheese2 TBS of any sugar free jam or jelly4 slices of whole wheat bread1 large egg2 egg whites3 TBS fat free milk1 TSP vanilla extract1/2 TSP Cinnamonpinch of nutmegFresh fruit as a topping (Optional)
Spread the cream cheese on the bread leaving a 1/2 inch border. Do the same with your sugar free jelly/jam.
Cut your sandwich in half
Beat the egg & egg whites in a large shallow bowl. Slowly add in the milk, vanilla, cinnamon & nutmeg
Dip your sandwich halves in the egg/eggwhite mixture. Be sure to coat each side
Spray a large non stick skillet with cooking spray & set over a medium heat. Add the sandwich halves & cook until browned. 2-4 minutes on each side.
Serve with fresh fruit or a couple teaspoons of syrup

Is the protein nutritional value correct at 70.5 or should it be 7.5?
I made this recipe sandwich style as written but the inside of the bread didn't cook - so I made traditional french toast and then filled it. I topped with agave syrup and it was pretty good. Thanks for sharing. - 3/25/12
