Pretzel Crusted Chicken Milanese

Ingredients
1 c. flour2 eggs1 1/2 c. pretzels crushed1/2 c. parmagianno-regianno cheese, grated1.8 lb boneless, skinless chicken thighsextra virgin olive oil
Directions
Place flour, eggs and pretzels mixed with cheese in 3 separate deep dishes. Lightly sprinkle chicken with salt. Dredge pieces in flour, then in egg, and then in pretzel- cheese mixture. Refrigerate for at least one hour.

Pour 1/2 in. olive oil into a large sauté pan. Heat over medium-high heat. Add butter. Cook chicken, in batches, 4 to 5 minutes per side or until golden brown. Do not crowd pan. Remove chicken and drain on paper towels. Sprinkle with salt and serve.
