Blended Vegetable Soup

Ingredients
1 package (10 oz) frozen spinach1 acorn squash4 medium carrots2-1/2 cups chopped celery1 cup vegetable broth
Directions
In a big pan put all ingredients except spinach and cover with water.
Let it boil until all ingredients are cooked.
Add spinach until it's no longer frozen.
Let it cool down, and then put it in the blender.
After everything has been blended, heat again.
Add salt if necessary.
You can modify the ingredients list to suit your taste and needs.

    I loved this recipe until I added the spinach. The green was a little hard to take and it added too strong a flavor. I loved the rest, though. - 11/5/07
