Piph's Fried Rice & Tofu

Ingredients
Brown Rice, medium grain, 1/2 c. cookedGinger Root, 1/2 tsp, mincedGarlic, 1 tsp, mincedKikoman Low Sodium Soy Sauce, 1 tbspOnions, raw, 1/4 small, finely choppedTofu, firm, 1/4 of blockRed Ripe Tomatoes, 1/2 medium whole (2-3/5" dia) Peanut Oil, 1 tbsp
Directions
Warm a frying pan and add peanut oil. Once peanut oil is shimmering, add tofu and cook until golden brown on all edges. Remove and let drain. Once cool, cut into cubes. Set aside.

Add ginger, onion, and garlic to pan and bring to a sweat. Add diced tomato and stir. Add already cooked brown rice and stir to heated through. Top with cubed tofu and sprinkle soy sauce over all. Toss again just to mix and serve.
