"Buttermilk" Pancakes

Ingredients
2 Eggs2 Cups (minus 2 Tbs) Light Soy Milk2 Tbs White Vinegar4 Tbs Vegetable oil2 Cups All Purpose Flour2 Tbs Sugar2 teas Baking Powder1 teas baking soda1 teas salt
Directions
First measure 2 Tablespoons regular vinegar into measuring cup, then add soy milk to measure 2 cups. Let sit until "curdled", then add all ingerdients in order.

Pour by 1/4 Cupful into prepared skillet or griddle. Cook until bubbles form, turn and cook other side until golden brown.

Serving Size: makes 14 pancakes using 1/4 Cup batter each
