Coconut Flour Microwave Muffin

Ingredients
1 TBS coconut flour2 TSP cinnamon1 TSP baking powder1 large or extra large egg2 TBS full fat coconut milk1 TSP melted coconut oilMicrowave-safe mug (8-12 oz capacity)
Directions
Mix dry ingredients and put aside.
Mix wet ingredients.
Add dry ingredients to wet ingredients and stir until most of the lumps are gone.
Transfer to 8-12 oz microwave-safe mug.
Cook on high power for 50-60 seconds.
The smaller the mug, the higher the muffin will puff.
Allow to cool for a minute, then remove from mug and eat plain, or with your spread/topping of choice.

    The only drawback for me was I felt the cinnamon muffin needed a bit of sweetener. Otherwise, delicious and satisfying. I altered the recipe myself by using cocoa instead of cinnamon, & adding Truvia (1.5 packets), & cooked 8 seconds longer (your microwave may vary!)---fantastic! - 7/6/14

    Unfortunately, this was very eggy and bland. I even used a medium egg, not the large that the recipe calls for. On the plus side, it did cook up properly and smelled really good. Next time, I’ll try adding sweetener. - 7/12/18
