Onion-Smothered Baked Round Steak

24 oz tenderized round steak-cut into (6) 4 oz pieces1/4 C flour1/2 tsp salt1/4 tsp pepper2 tbsp, plus 1 teaspoon olive oil1/3 c sliced onions
Heat oven to 350 degrees.
Mix flour, salt and pepper in a dish; dredge the 6 slices of round steak in the flour mixture and set aside.
Heat 2 Tbsp olive oil in skillet over medium high heat.
Place 4 slices of round steak in hot oil and brown (about 1 minute on each side). Remove to a roasting pan sprayed with non-stick spray; add remaining teaspoon of oil to skillet and 2 remaining pieces of round steak-brown.
Place sliced onion on top of meat. Cover and bake at 350 degrees for approximately 30-40 minutes or until meat can be pulled apart with a fork.
Make 6-4 oz (pre-cooked weight) servings.

I browned the meat in my dutch oven, then deglazed the pan with about 1/2 c of leftover wine before adding the meat back and putting it in the oven, it made a wonderfull sauce. I used a whole large onion and added some carrots. I really felt like I was eating something much more fattening. - 3/8/10

My husband would give this 4 stars but for me it was more like 3.5. Not bad, I added more onion, garlic & steak seasoning. The cooking time was spot on for a steak with just barely beyond a pink center stage. I'll try it again and maybe give it a better sear, I think that's where I went wrong. - 11/5/13

When I make this I use eye of round and after pulling onions out of the skillet, I make a pan gravey, pour it over the steak and bake it. I bake it for about an hour- hour and a half to get full tenderness. I also add mushrooms sometimes. The gravy is great for putting on mashed potatoes. - 6/2/13

I just took this out of the oven, it smells so good. The little bite I had to check it was wonderful, it falls apart with the fork, can't wait for dinner! I did add some garlic and red wine to the pan (used my stone casserole) before placing it in the oven, other than that went by the recipe. - 1/29/12
