Black Bean, Corn and Quinoa Salad

Ingredients
2 c. cooked corn kernels, drained1 (32 oz. can) black beans, rinsed and drained3/4 c. cooked quinoa (1/4 c. dried quinoa plus 3/4 c. water - simmer 5 minutes - see directions)1 c. diced tomatoes1 c. fresh parsley, chopped1 c. fresh cilantro, chopped1/3 c. lemon juice2 T. olive oil1/2 tsp. ground oregano1 tsp. ground cumin1/4 tsp. garlic powder1/4 tsp each salt and pepper
Directions
In small sauce pan, add 1/4 c. quinoa and 3/4 c. water and bring to boil. Turn down low heat and cook about 4-5 minutes. Remove from heat and let stand about 5 minutes. In a separate small sauce pan, warm up frozen corn kernels.
In a large mixing bowl, combine oil, lemon juice and seasonings. Add all remaining ingredients, cooked quinoa and corn and toss well.
