Ingredients
6- boneless, skinless thighs1-box frozen spinach1-cup (or can of coconut milk-taste to your desire)1-small onion (sliced)3- cloves garlic (crushed)black peppersalt to taste
Directions
*Place chicken thighs,garlic cloves(crushed), small onion(sliced),& frozen Spinach in a pot of boiling water.
*Let it cook for 25 min. Cover.
*Add coconut milk and pepper and simmer for remaining 30 min.

*Salt(optional)
*Makes 6 servings.(1 thigh each)
