Healthy Shrimp and Veggie Frittata

Ingredients
1 c Egg Beaters3 large eggs1/2 c skim milkSalt and Pepper to taste1gram (tbsp) McCormick Seasoned Herb Medley1 small onion chopped1 c frozen peas partially cooked1/2 c chopped green peppers1 tsp oil2/3 c reduced fat parmesan cheese1 lb shrimp (cooked or uncooked)
Directions
Saute the onion and pepper in oil until tender. If the shrimp is precooked, add to pan with onion to heat. If not, cook first as directed and set aside. Remove from heat, add the partially cooked peas and cheese. Mix well and spread on the bottom of a non-stick square baking pan (8 x 8).
Mix the egg substitute, eggs and milk with a whisk. Add in seasoning, salt and pepper to taste. Pour the egg mixture over top of the shrimp mixture.
Bake at 350 for 30 minutes until eggs are set. Makes 9 pieces.

This goes excellent with a salad and toast for an easy family meal.
