Golden Cheddar Cheese Soup

Ingredients
1 cup chapped onions2 tablespoons vegetable oil2 medium potatioes, thinly sliced1 medium carrot, thinly sliced1 medium yellow summer squash, thinkly sliced1/2 teaspoon ground black pepper (or to taste)pinch of turmeric2 cups vegetable stock or water1 cup unsweetened vanilla almond milk (original recipe calls for either buttermilk or milk)1 cup shredded sharp cheddar cheesesalt to tasteminced fresh scallions, chives or parsley to garnich (optional)
Directions
1. Saute the onions the vegetable oil for about 5 minutes or until they begin to soften.
2. Stir in the potatioes, carrots, squash, black pepper, and turmeric, and stir.
3. Stir in the milk, and cheese.
4. Puree the soup in a blender or food processor.
5. Gently reheat, and add salt and pepper.
6. Top with scallions, chives, or parsley.

Serving Size: makes 4-6 8 oz servings
