Ingredients
1 cup Brown Basmati Rice6 cups milk1 tsp salt2 tbsp butter1 tsp lemon zest3 tbsp brown sugar1/2 tsp ground cinnamon3/4 cup raisins1 tbsp vanilla
Directions
Cook rice, milk and salt over very low heat or in double boiler until done (approx 1 hour). Stir in remaining ingredients.
Milk may not be completely absorbed; will thicken upon cooling.

    The recipe was unclear to me. I cooked it in a double boiler over low heat. I didn't know if it needed to be covered, so I didn't. After 2 1/2 hours, when the rice still wasn't cooked, I covered it. (What can I say? I never cooked brown basmati rice) That said, when done, the pudding was delicious. - 1/11/14
